Where Does Our El Salvador Coffee Come From?
Nestled in the heart of Central America, El Salvador may be the smallest country in the region, but it packs a mighty punch when it comes to coffee production. Our El Salvador coffee, aptly named “Dynasty”, hails from the picturesque region of Chalcuapa. This area, known for its rich volcanic soil and ideal climate, produces some of the finest beans in the country.
What Makes Chalcuapa Special?
Chalcuapa isn’t just any coffee-growing region. It’s a place steeped in history, with ancient Mayan ruins dotting the landscape. But it’s not just the past that makes this area unique. The present-day coffee farms, including the esteemed Finca San Antonio where our beans are grown, continue a tradition of excellence that’s been cultivated for generations.
The volcanic soil in Chalcuapa is a coffee plant’s best friend. Rich in minerals and nutrients, it provides the perfect foundation for growing exceptional coffee. Combine this with the region’s high altitude and you’ve got a recipe for coffee perfection.
Why Finca San Antonio?
Finca San Antonio isn’t just another coffee estate. It’s a place where passion for quality meets respect for tradition. The farm has been producing top-notch coffee for years, and we’re thrilled to bring their beans to your cup.
But what sets Finca San Antonio apart? It’s their unwavering commitment to quality at every stage of the process. From carefully selecting only the ripest cherries to meticulously processing the beans, every step is carried out with precision and care.
What Coffee Variety Do We Use?
Our El Salvador coffee features the renowned Bourbon variety. Don’t let the name fool you – this isn’t a whiskey-flavoured coffee! Bourbon is actually one of the most highly regarded coffee varieties in the world.
Why Bourbon?
Bourbon coffee trees are known for producing beans with a beautifully balanced flavour profile. They offer a wonderful sweetness, often with notes of caramel and nuts, complemented by a gentle acidity. It’s this complexity that makes Bourbon beans so prized among coffee connoisseurs.
What Does SHG Mean?
You might have noticed that our El Salvador coffee is graded as SHG. But what does this actually mean? SHG stands for Strictly High Grown, and it’s a mark of quality that serious coffee lovers look out for.
Why Is SHG Important?
Coffee beans that are grown at higher altitudes tend to be denser and more flavourful. The SHG designation means that these beans were grown at altitudes of at least 1,200 metres above sea level. At these heights, coffee cherries mature more slowly, allowing more time for complex flavours to develop within the beans.
What About Certification?
Our El Salvador coffee proudly bears the RFA certification. RFA stands for Rainforest Alliance, a non-profit organisation working to create a more sustainable world.
Why Does RFA Certification Matter?
When you see that little green frog seal, you can be confident that the coffee has been produced using methods that support social, economic, and environmental sustainability. This means fair treatment of workers, conservation of natural resources, and protection of wildlife habitats.
At Guilty Coffee, we believe that great coffee shouldn’t come at the expense of people or the planet. That’s why we’re committed to sourcing beans from certified farms like Finca San Antonio.
How Is Our El Salvador Coffee Processed?
Our El Salvador beans undergo wet processing, also known as washed processing. This method is preferred for its ability to produce clean, bright flavours in the cup.
What Is Wet Processing?
In wet processing, the coffee cherries are sorted and then pulped to remove the outer skin. The beans, still coated in mucilage, are then fermented in water tanks. After fermentation, the beans are washed clean and dried.
This process tends to highlight the inherent flavours of the bean, resulting in a cup that truly showcases the unique characteristics of the Bourbon variety and the terroir of Chalcuapa.
